Zucchini Pancakes

Zucchini Pancakes
4-5 med. zucchini - finely grated
3 eggs
4 tbs whole wheat flour
1 tsp oregano
3 tbs parmeson, grated
1 tsp. dried parsley (or a little fresh chopped)
1 tsp garlic salt (or some salt and finely minced garlic)
Mix ingredients.
Grill as you would regular pancakes until brown.
I like these pancakes with real maple syrup. Unusual flavor combination but surprisingly good.
