Zucchini Pie

Zucchini Pie

*A member brought this to our Farm Party last year and it was delicious!

Pie Filling:

In a bowl stir together:

5 cups cubed zucchini

1/3 cup flour

2 ½ Tbsp sugar

2 Tbsp brown sugar

1 ½ tsp cinnamon

1/8 tsp nutmeg

1/8 tsp ginger

 

Pie Topping:

In a bowl stir together:

½ cup quick oats

½ cups brown sugar

2 Tbsp sugar

1 tsp cinnamon

Then cut in 3 or 4 Tbsp of softened butter with a knife or pastry cutter.

 

Empty pie filling into a deep-dish pie crust. Spread pie topping evenly on top. Bake in preheated oven at 400 degrees for 50 minutes. You may need to cover the pie with foil half way through baking.
